This dough mix is the same pizzeria-grade high protein bromated flour, salt and sugar recipe as the mix included in our Pizza Dough Kit, but omits the yeast and the water. The recipe remains the same; just add 8 oz of water and yeast to the mix, knead and cold ferment and you'll have authentic NYC style pizza dough at home. Well, nearly authentic, if you're not using NYC tap water.
